Okay so, some mornings just need pancakes. I don’t make the rules. Doesn’t matter how busy the

and somehow everything already feels a little more manageable.

I started making these because I wanted something a bit lighter than regular pancakes but I was

NOT willing to sacrifice taste for it. And look, almond flour kind of surprised me here. The

pancakes come out soft, a little nutty, golden on the edges — genuinely just as good as the classic

version, maybe even better honestly.

If you’ve never made almond flour pancakes, I get the skepticism. “Almond flour” sounds like one

of those swaps that ends in a sad, dry, sandpaper-textured pancake. That’s not what happens

here though. These are actually good. Like, forget-you’re-eating-something-different good.

Okay But Why Almond Flour Though

It’s literally just finely ground almonds — nothing fancy going on. But it does something different

once it hits a hot pan. Texture’s kind of hard to explain until you’ve had it — moist, a little rich, this

subtle nutty thing happening underneath whatever topping you put on it. Maple syrup, fruit, yogurt,

whatever’s sitting in your fridge that morning.

It’s naturally gluten-free too, if that matters to you or someone you’re cooking for. But even if it

doesn’t, honestly? Still worth making just because it tastes good. That’s really the only reason I

keep making them.

And the best part — you don’t need to know what you’re doing to pull this off. No technique, no

equipment beyond a bowl and a pan. If you’ve made regular pancakes before, you’ve got this.

  • 2 large eggs
  • ½ cup milk whatever kind you have
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon melted butter or coconut oil
  • Toppings — go with your mood: berries banana, Greek yogurt, almond butter, more maple syrup

How to Actually Make Them
  1. Mix your dry stuff first — almond flour, baking powder, salt — in a big bowl. Getting these
  2. combined evenly actually matters more than you’d think, otherwise you get these weird little
  3. pockets that taste… off.
  4. Separate bowl: whisk the eggs, milk, honey, vanilla together. The eggs are doing most of the
  5. heavy lifting here since almond flour doesn’t have gluten to hold things together the way regular
  6. flour does.
  7. Pour the wet into the dry, stir gently. Don’t overmix — a few lumps are fine, actually kind of
  8. expected honestly. Overmixing just makes them denser and a little tougher, which nobody wants.
  9. Now let it rest for like five minutes. I know, I know, you’re hungry, this feels like an annoying extra
  10. step. But it lets the almond flour soak up the liquid properly and the texture really is better for it.
  11. Trust the process on this one.
  12. Heat your pan on medium, add a bit of butter or oil, pour small amounts of batter for each
  13. pancake. Small is key here — these are a little more delicate than regular pancakes, so smaller
  14. ones flip so much easier and don’t fall apart on you.
  15. Cook about 2–3 minutes till you see bubbles forming on top, that’s your cue to flip. Other side goes
  16. till golden. Done.
  17. Stack them up, add whatever toppings you’re feeling, eat while they’re still warm. Honestly that

Tips I’ve Picked Up Along the Way
  1. Fine almond flour, not almond meal. The coarse stuff gives you a grainy texture that’s just not it.
  2. Make sure you’re grabbing the fine kind.
  3. Medium heat, not high. High heat burns the outside before the inside even catches up. Medium’s
  4. slower but so much more reliable.
Ways to Mix It Up
  1. Once you’ve got the base recipe figured out, there’s a lot you can do with it. Chocolate chips if
  2. you’re feeling indulgent. Cinnamon or pumpkin spice if it’s giving fall. Greek yogurt and almonds on
  3. top if you want more protein in there. Or just keep it classic with syrup and berries — genuinely
  4. can’t go wrong with that combo.
  5. If your week’s looking chaotic, double the batch and freeze the extras. They reheat surprisingly
  6. well straight from frozen — pan or microwave, either works.
Why This One Stuck
  1. Not because it’s fancy — it’s really not. It’s because it’s easy, it works every single time, and it
  2. makes a regular morning feel like slightly less of a grind. That’s genuinely all I want from a
  3. breakfast recipe most days.

Notes

Always use fine almond flour, not almond meal — the coarse stuff gives a grainy texture. Keep the pancakes small so they don’t fall apart when flipping, and don’t skip the 5-minute rest — it really does improve the texture.
